Norm's Texas Chili dates back to the 1970's Terlingua International Chili Championships - the chili cook-off capital of the world.  Mr. & Mrs. Bill Brown gave him their original recipe when he moved from Texas.  Norm was given permission to use variations of this recipe outside of Texas and friends in New England have been happy with it since!  If you are reading this from Texas then please saddle up and move on - this recipe is not for you!

Norm's Texas Beer Chili

Start at least one day before you are going to serve chili...

brown 3 lbs cubed chuck tender roast and pour off liquid and add
4 TBL minced onion flakes
1/2 TBL salt (optional - but all these things are optional and amounts to taste)
1 3/4 TSP garlic puree
5 dried jap peppers
1 fresh jalapeno

cover with water (a.k.a. beer) and medium boil for an hour or so
drink a beer

add 8 oz tomato sauce
add 10 oz RO*TEL diced tomatoes & green chilies

add more water (beer) and medium boil another hour or so
drink a beer

add 8 TBL chili powder
1 1/2 TSP cumin
1 1/2 TSP garlic powder
1 1/2 TSP paprika

add liquid (water or beer) as needed and slow boil for another hour or so
drink a beer and save the chili for another day!
